Diced Chicken Breast With Escallion & Onions
3 oz Cooked Chicken Breasts
1/ 2 cup Tomatoes
Yellow Bell Peppers
1 Chopped Purple Onion
Mushrooms
Sweet Potato cubes (optional)
Herbs to taste
This can be used as a base to make a chicken salad as well as a chicken wrap and served with broccoli and lettuce
PREPARATION INSTRUCTIONS
1.Heat 1/4 teaspoon olive oil in a frying pan
2. Add escallion, onions, tomatoes, mushrooms,potato and bell peppers to the heated oil
3. Add 3 ounces cooked and diced chicken breast cubes.
4. Add herbs to taste
5. Cook until meat is tender
