Sweet Potato Flat Bread
Ingredients
Sweet potato flatbread for making wraps or eat as roti.
2 cups mashed sweet potato
1 cup sifted or baking flour
salt
Baking powder
Seasoning (Minced garlic or parsley flakes or thyme)
½ tsp oil (for greasing)
Whey protein powder (optional)
Instructions
Boil the sweet potatoes and save the water you boiled the potatoes in as they may get a bit dry as you mash them. Once warm enough to touch, mash the potatoes adding the water as necessary. If they are hot you won’t be able to knead the dough as you’ll burn yourself. Measure out 2 cups and in a large bowl add the sweet potatoes, the flour, baking powder, salt and seasonings. Add the whey protein powder as well (optional). Blend until a dough forms then dust with flour if sticky.
Make balls then roll out flat and place in lightly greased skillet or frying pan over low heat. Be sure to flip to the other side when that side is done. Do NOT add oil after each flat bread/roti, you don’t have to add any oil at all if you don’t want to.
Sweet potato flat bread can be eaten on its own with tea or with a little nut butter or spread, as well as with meat and vegetables. The sweet potato flatbread is great for making wraps or eat as roti.
