Ingredients

3 tablespoons honey

¼ cup orange juice

2 tablespoons fresh lemon juice

1 box (8 oz) pitted whole dates, chopped

2½ cups whole wheat flour

½ teaspoon baking soda

¼ teaspoon baking powder

¼ cup unsweetened applesauce

3 tablespoons real maple syrup

2 egg whites

1 tablespoon canola oil

 

Directions

  1. Heat oven to 350°F. Line 13×9-inch pan with foil, leaving foil overhanging at 2 opposite sides of pan; lightly spray foil with cooking spray.
  2. In small bowl, mix honey, orange juice and lemon juice. Stir in dates.
  3. In large bowl, mix flour, baking soda and baking powder. In medium bowl, stir applesauce, syrup, egg whites and oil until blended. Add applesauce mixture to flour mixture. Beat with electric mixer on low speed just until combined (mixture will be crumbly). Stir in date mixture. Press evenly in pan with fingers or back of spoon.
  4. Bake 12 to 15 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Use foil to lift out of pan. Cut into 6 rows by 4 rows.
