Sautéed Vegetables

 

Ingredients

1 tablespoon olive or coconut oil

1 teaspoon minced garlic

½  chopped red bell pepper

½ chopped yellow bell pepper

½ chopped onion

6 chopped cremini mushrooms

4 chopped broccoli florets

½ teaspoon oregano

2 tablespoons soy sauce

2 tablespoons chicken stock

 

Instructions

In a large pan over medium to high heat, add the olive oil and heat. Add the chopped garlic and sauté, stirring, for 1 minute. Add all of the vegetables and cook for about 2 minutes or just until starting to wilt. Add the oregano, soy sauce and chicken stock and stir well and cook for 3 minutes or  just until vegetables are wilted. Remove from heat and serve.
