Vegetable Soup

ITK Serving 1 – 1 ½ cups
Ingredients
- 1 turnip
- 1 medium sized cho cho
- 1 medium sized carrot
- ½ cup diced pumpkin
- ½ teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Saute the turnip, cho cho and carrot for about 10 minutes stirring occasionally while you chop up the pumpkin
- Bring pumpkin to a boil.
- Combine sautéed vegetables and pumpkin and puree the soup with a handheld blender or in batches in a regular blender.
- After the soup is pureed you can add sea salt and pepper to your taste. Garnish each bowl with parsley if you wish.
