Vegetable Soup

ITK Serving 1 – 1 ½ cups

Ingredients

  • 1 turnip
  • 1 medium sized cho cho
  • 1 medium sized carrot
  • ½ cup diced pumpkin
  • ½ teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Saute the turnip, cho cho and carrot for about 10 minutes stirring occasionally while you chop up the pumpkin
  2. Bring pumpkin to a boil.
  3. Combine sautéed vegetables and pumpkin and puree the soup with a handheld blender or in batches in a regular blender.
  4. After the soup is pureed you can add sea salt and pepper to your taste. Garnish each bowl with parsley if you wish.
